Dubai will host what its backers say is the world’s first restaurant whose concept and menu are developed by artificial intelligence. WOOHOO, due to open in September near the Burj Khalifa, relies on a proprietary large-language model called “Chef Aiman” to design dishes, ambience and service workflows. Chef Aiman has been trained on decades of food-science research, molecular-composition data and more than a thousand global recipes, according to co-founder Ahmet Oytun Cakir, who also heads hospitality firm Gastronaut. The system breaks ingredients down to their component textures and flavours before recombining them into novel pairings that are then refined by human cooks under renowned Dubai-based chef Reif Othman. While humans will continue to prepare the food, the developers say the technology is intended to elevate creativity and curb waste by re-using ingredients such as meat trimmings and fat. Longer term, WOOHOO’s founders plan to license Chef Aiman to other kitchens worldwide as restaurants seek new ways to improve sustainability and differentiate dining experiences.
